Theo’s Mediterranean whole chicken thighs, cucumber, gem lettuce, tomato and cucumber, dill & feta salad, Theo’s brioche bun

INGREDIENTS
4 Theo’s Mediterranean whole chicken thighs
1/4 gem lettuce
1/4 cucumber, ribbons
1 large tomato, sliced
Squeeze of fresh lemon juice
1/4 bunch of fresh dill, roughly chopped
Handful of crumbled feta cheese
4 tbsp Theo’s minted yoghurt sauce
Pinch of salt
4 Theo’s brioche buns

METHOD
To make salad: In a small bowl place cucumber ribbons, add pinch of salt and set a side. Cook chicken for 30 minutes in the oven at 180 degrees. Lightly toast brioche buns. Remove excess water from the cucumber, add lemon juice, roughly chopped dill and crumbled feta. Slather each bun with Theo’s minted yoghurt sauce. Add lettuce, tomato and chicken. Top up with cucumber salad.
