TIKKA FOLDED NAAN

A vibrant and satisfying handheld dish featuring Theo’s tender sliced Tikka Chicken, a crisp and zesty kachumber salad, and a cooling minted yogurt sauce, all wrapped in a warm, pillowy naan.

Ingredients
  

  • 480 g Theo’s marinated Tikka sliced chicken
  • 6 folded naan breads 
  • 120 Theo’s minted yogurt sauce
  • 1/2 large cucumber, sliced into half moons
  • 200 g cherry tomatoes, halved
  • 100 g radishes, thinly sliced
  • 50 g 3 spring onions, finely diced
  • 5 g fresh mint leaves, chopped
  • 5 g fresh coriander leaves, chopped
  • 25 ml lime juice
  • 1/2 tsp salt

Instructions
 

  • Cook the chicken in the oven at 180°C for 25-30 minutes or until is cooked through.
  • In a large bowl, mix the cucumber, cherry tomatoes, radishes, spring onions, mint, coriander, lime juice, and a pinch of salt. Toss well and set aside.
  • Briefly heat the naan breads in a dry pan or oven until soft and warm.
  • Open each naan slightly. Add warm tikka chicken, top with fresh kachumber salad, and drizzle with Theo’s minted yogurt sauce.
  • Fold gently and serve immediately.
