Theo’s Tikka chicken whole thigh, mango & mustard mayo, kinda raita slaw, crushed poppadoms, brioche bun

INGREDIENTS
4 Tikka chicken whole thighs
150g peeled and diced mango
2 tsp lime juice
3 tbsp American mustard
3 tbsp mayo
1/4 small white cabbage, finely shredded
1/2 deseeded cucumber
Small bunch of fresh, roughly chopped mint
1 tbsp lemon juice
2 tbsp Greek yoghurt
1 tbsp nigella seeds
1 tbsp ground black pepper
2 crushed poppadoms
4 Theo’s brioche burger buns

METHOD
Add peeled and diced mango in a food processor. Add mustard, mayo and
lime juice. Blend until smooth. Toss finely shredded white cabbage,
deseeded and julienne cucumber and roughly chopped mint. Add lime
juice, nigella seeds and black pepper to mango and mustard mayo and mix
altogether. Cook the chicken for 30 minutes at 180°. Lightly toast
the buns. Slather each bun with sauce, raita slaw and chicken. Crush
poppadoms and sprinkle over the chicken. Top with other half of the bun.
